Our second Ros is a brilliant pale salmon color. The intense aromas are reminiscent of wild strawberries and citrus blossom. It has a savory yet smooth palate with some texture at the finish, and a long lingering aftertaste. The wine was conceived more as a pink red wine than a rose-tinged white; it relies on phenolics for structure rather than being an acid-driven, just-done ros. It’s dry and fresh and leans towards texture and savoriness. Its a blend of Cabernet Sauvignon (75%) and Shiraz grapes (25%), which were carefully pressed to extract enough color and flavor, but not too much. After finishing fermentation, the wine was barrel aged for 6 months. alc 13%. – Sandra de Pury
