One of the most interesting Australian single malts on the market, Starward Dolce is initially aged in Australian red wine casks. It is then transferred and polished in casks that formerly held an Australian dessert wine modelled on Sicilian Moscato. This gives this limited release a distinctive flavour full of fruity date and strawberry notes highlighted against a delicious backdrop of caramel, cola cubes, bonbons, orange peel, and marshmallows. Decidedly sweet at the finish, Starward Dolce leaves mounds of cherry toffee and simmering spices on the tongue. Serve neat or with just a tiny drop of water to release more of the spicy notes.
